it's most likely that you'll have to catch a train if you're flying into Paris; the easiest way to book and to look at the available options is to just use thetrainline.com
there are two good destinations for heading down south to Provence:
Avignon TGV
Marseille St-Charles
unless you purposefully want to take the slowpoke train (or actually go to downtown Avignon), make sure you choose the TGV destination
the ride here is non-stop and relatively fast (~3.5 hrs), and the trains leave either from Gare de Lyon inside Paris, or straight from the airport (Aéroport Paris Roissy Charles de Gaulle CDG T2)
same as for Avignon, you can catch a high-speed train down to Marseille either from the airport, or also from Gare de Lyon
similarly, the ride here is non-stop and just a tad longer than to Avignon (~4 hrs)
